Culinary Arts II students enjoyed a trip to Mississippi University for Women to tour their culinary department and learn about student life on the MUW campus. They also viewed a demonstration on reverse spherification in which a recent culinary graduate made balls of strawberry purée using sodium alginate and calcium lactate. Imagine homemade boba!
They concluded their trip visiting several of the Eat with Us restaurants-The Grill, Harvey’s and Sweet Peppers Deli. Corporate Chef Matt Bronski, took them through the kitchens and explained the way these restaurants consistently deliver high quality, freshly made foods.
